Kitchen 31

Kitchen 31 is a one-chef izakaya in Sinchon, Seoul, serving aged hoe and kaisendon. The menu also includes negitoro don, mentaiko and uni pasta, and agedashi tofu. Kaisendon is limited to 20 bowls per day, and the chef ages the fish he sources himself. The space is very small and the restroom is narrow.
