Jugo is a soba restaurant on the Philosopher's Path in Kyoto that serves buckwheat noodles. The noodles are made from 100% buckwheat flour and can be eaten plain, dipped in tsuyu, or topped with soy sauce. The owner takes orders, then mixes and boils the dough himself, and the cooking process and the view outside are visible through a full glass window. He runs the place alone, so food takes time to arrive after ordering, and at the end he also serves the water the noodles were boiled in.
