Sushi Ishimatsu is a sushi restaurant in a residential neighborhood near Ginkaku-ji and the Philosopher's Path in Kyoto. It serves thick Edomae-style sushi, including chirashizushi, premium nigiri, and eel over rice, with each piece made from large cuts of raw fish and shari. At the counter seats, sushi is handed to you quickly in front of the kitchen, and the restaurant closes earlier than scheduled when ingredients run out. It is walk-in only with no reservations, and cash is the only accepted payment.
