Menya Sugo in Shimbashi, Tokyo, is a tsukemen shop where you dip noodles into a thick tsukemen broth. The broth is strongly flavored with dried sardines, and the special tsukemen comes with several toppings. There are only five seats, and you buy a cash meal ticket from a machine outside before telling staff your noodle size of small, medium, or large. Groups of five are seated only after everyone finishes, so waits reach around an hour even on weekdays.
