Matsuba Honten is a soba restaurant on the third floor beside the Kamo River in Kyoto, serving cold and hot soba with herring soba as its signature dish. The herring is simmered in sweet soy sauce and placed on hot soba, and diners can also order cold daikon soba and fried shrimp. Meals are eaten at the third-floor window looking out over the Kamo River, and the fried shrimp arrives as two separate pieces. The herring soba has an unusual first taste because of the sweetly simmered herring and its unfamiliar flavor.
