Izuju is a traditional sushi shop in the Gion alleys of Kyoto that serves hakozushi and inarizushi. The rice and topping are separated with shiso, and the sushi is eaten with pickled ginger rather than soy sauce or wasabi. On weekday late lunches, customers are usually seated right away, but when the shop fills up the wait is about 20 minutes and matcha is served alongside. When the mackerel is not in good condition, sabazushi is not sold.
