Its typical order is a bowl of noodles in sanlatang, malatang, or clear broth, with beef brisket or fish balls and long fried fish cake on top. Dishes come out quickly, and diners adjust the heat themselves with chili oil and spices. Adding a lot of spice makes the broth quite hot.
