Cafe de L'Ambre sits in a back alley of Ginza and has served siphon-drip coffee since it opened in 1948, now run by the third generation. Beans such as Guatemala and Ethiopia are recommended according to preference, and the menu also includes Kabocha no Joou and coffee jelly. At the bar seats, customers can smell the beans and watch the barista brew by siphon up close. Seating is limited and the space is small, so staying for a long time is difficult.
