Ihanjin Sukseonghoe is a hoe restaurant in Cheonho-dong, Gangdong-gu, Seoul, that serves only one dish: aged flounder hoe. Thick slices of flounder sit over fin meat, and the aging gives the fish a chewy texture and a savory taste. On weekends the wait runs about an hour, and the waitlist sometimes closes before 5 p.m., so an early arrival is needed. The maeuntang is less satisfying than the hoe.
