Torisho Ishii is a yakitori restaurant in Osaka that uses Kosaka chicken for its skewers and chicken dishes, built around an omakase course. Cuts such as breast, tenderloin, thigh, gizzard, and tsukune are grilled over charcoal, leaving the outside crisp and the inside juicy. The chef grills facing the charcoal at the counter, and the course starts all at once at the chef's pace. Reservations are very hard to get, requiring booking more than two months ahead.
