Hatsu

Hatsu is a small sushi restaurant on the third floor of Hotel Royal in Newton, Singapore, serving Japanese omakase and sushi. Owner-chef Leon prepares the courses himself using seasonal ingredients air-flown from Japan, and the menu includes tuna sushi grilled on a hot stone and a rice bowl topped with sea urchin, tuna and caviar. The 20-seat restaurant opened on 18 July 2022, and diners at the counter can watch the chef make sushi. For birthdays, the restaurant prepares a cheesecake, a Polaroid photo and a card.
