Ginsui is a restaurant near the Kamo River in Kyoto that serves single-person nabe sukiyaki and shabu-shabu. The beef sukiyaki arrives with the meat placed over bean sprouts, onion, and cabbage, and tofu, konnyaku, enoki mushrooms, and udon can be added. The owner pours the sauce and assists from the first cooking step through to eating, and payment is in cash. When customers gather, food and service can be delayed by about 30 minutes.
