Jogaedo is a seafood restaurant near Ttukdo Market in Seongsu, Seoul, grilling scallops, pen shells, and abalone. The shellfish are cooked on a gravel griddle, and the juices left behind are boiled and eaten like a clam soup. Staff grill the first batch, but waits can run up to two hours. After the first batch, diners grill the rest themselves, which makes it hard to control how much the shellfish are cooked.
