Sushi Saikou is a ten-seat sushi-ya in Susukino, Sapporo, serving an omakase course built on Hokkaido seafood. It uses Hakodate tuna, Otaru mantis shrimp, and flounder and ankimo aged with 6kg of kelp, and the ingredients are cut to order at the counter. The course runs about two hours and twenty minutes from appetizer to dessert, with the fish explained in Korean. Reservations have been made about a month ahead by phone or online, so it does not suit walk-in visits.
