Sejong

Sejeong is a noodle shop next to Bupyeong Kkangtong Market in Busan that serves squid (hanchi) hoe (raw fish) mixed with vegetables and buckwheat noodles. The hanchi buckwheat noodle platter comes with squid, buckwheat noodles, cucumber and vegetables, and the remaining sauce is mixed with seaweed and rice and topped with quail eggs. The shop opens at 5:30 p.m., uses a ticket machine for the queue, and accepts takeout orders. The space is small and waits are long, with waits of over two hours or takeout taking three and a half hours.
