Ibashou is a freshwater eel restaurant in the Sakae alleyways of Nagoya. Its signature hitsumabushi serves eel grilled crisp on the outside with scallions and wasabi, finished by pouring broth over the rice. At lunch the seats fill up and a wait forms, though at other times you can sit down right away. The portions of hitsumabushi are on the small side.
