Jushu is a Japanese restaurant in a Nishiazabu alley where a chef from Saga serves Kansai-style kaiseki using seasonal Saga ingredients, seafood, and Saga beef. The seasonal omakase runs 7 to 12 courses, centered on light seasoning that brings out the sweetness of the fish and rice cooked in a pot. The chef handles the entire process alone in front of guests, and conversation is possible up close at the counter. Water and warm tea are charged without notice, and the chef calls a taxi after the meal.
