Sushi Tetsu is a sushi restaurant in front of the Gamo River in Kyoto. Tuna, salmon, and eel sushi are made in front of diners as they order, and tempura and steamed egg custard are also served. On weekdays before 6 p.m., there is no wait or a wait of about 10 minutes. Groups of one or two order from an assigned chef at the counter, while lunch and dinner waits can last 15 to 40 minutes or longer.
