So Oyster is an oyster bar in Tin Hau, Hong Kong, serving raw oysters and Western seafood dishes. Each day it offers six kinds of raw oysters, including Saldanha Bay, Korean Gold, Gillardeau and Ostra Regal, kept at 0.2 to 0.5 degrees in a dedicated refrigerator and opened to order. Staff explain the characteristics of each origin before ordering and guide diners from mild to strong flavors, and the menu also includes Spanish seafood paella cooked on a traditional griddle. Tables are spaced apart, there is no time limit, and French onion soup and classic lobster bisque are served alongside.
