Amber

Amber is a French fine dining restaurant on the seventh floor of the Mandarin Oriental hotel in Central, Hong Kong. Its signature dish, aka uni, combines seafood with cauliflower, lobster jelly, and caviar, and every dish is served without dairy. Guests who choose the kitchen experience enter the cooking area during the meal to watch the chefs work and hear explanations of the menu. The seasoning across the dishes is on the rich side.
