Ginza Katana Bistro is a five- to six-seat counter restaurant in Ginza serving omakase sushi. The course includes fish, shari, and sea urchin brought in from Hokkaido, with sake and wine pairings alongside. The chef cooks in front of guests and explains fish aging, seasoning, and how to eat each piece in English, and knives are displayed inside the restaurant. The wagyu course can be tough depending on the cut.
