Noko Udon

Noko Udon Seizosho Canal City Hakata is an udon shop on the basement first floor of Canal City Hakata in Fukuoka that makes its own noodles. Customers choose on udon, cold udon, or bibim udon, then add burdock tempura or croquettes at the serving counter. The noodles are thinner than medium-thick noodles and are springy and chewy, and customers line up to receive their udon first and pick their tempura last before paying. The tempura is sometimes soggy.
