Hongtak

Hongtak is a restaurant in Busan that serves skate dishes. Its hongeo samhap and course meals include clear hongeo tang, jeon, and twigim. The owner prepares the skate according to standards learned in Yeongam, Jeollanam-do, and mixes Geumjeongsanseong makgeolli and Changwon Bukmyeon makgeolli one to one in a kettle. Side dishes are minimal, and there is no jjigae or gyeranjjim.
