Mt.FUJI Matcha Cafe Pancakes & Speakeasy Bar is a dessert cafe near Tsukiji Market in Tokyo that serves matcha bingsu, strawberry bingsu, and souffle pancakes. The matcha bingsu comes with thick matcha cream, walnut jeonggwa, and soft black beans, and the souffle pancakes arrive light as air. A pianist on one side of the cafe takes requests and plays them on the spot, adding explanations of each piece. Unlike the busy Tsukiji Market, the interior is quiet and cool.
