Bánh mì Mama is a street stall selling bánh mì sandwiches near St. Joseph's Cathedral in Hanoi. Its signature item, number 1, is filled with sausage, egg, pâté, vegetables and sauce, then pressed and grilled so the bread comes out warm and crisp. Customers take a number ticket when ordering and, when their turn comes, choose cilantro and spice level before receiving the bánh mì; honey butter bread is sold as well. Lines run from morning through lunch, with waits of 20 to 40 minutes because preparation is slow.
