Namsan Makchang is a Seoul restaurant that grills pork and makchang over charcoal, with galmaegisal as its main dish. Long-cut strips of galmaegisal are served with salted shrimp, salted pollack roe, salted fish innards, and salted hairtail innards, along with seasoned crab, white kimchi, geotjeori, and pa-jeori. The doenjang jjigae comes in a ttukbaegi filled to the brim, and makchang and kkorangi are eaten together as well. The wait can run as long as three hours.
