Sushi Kimura – Premium Edomae Sushi Experience, Tokyo

Sushi Kimura is an Edomae sushi restaurant serving an omakase course, located near Suitengumae Station. The chef, from Hachinohe in Aomori, uses aging techniques for the fish and red vinegar rice, presenting a course that runs from appetizers to nigiri. At the hinoki L-shaped counter, the chef forms sushi in front of guests and explains the fish and preparation methods in English, and sake and wine are also available. Booking through a foreigner reservation site results in a different set menu from locals or a higher price.
