Sushi Akira is an Edomae sushi restaurant in the Hiroo and Ebisu area of Tokyo that serves a course of tsumami, sashimi and sushi. It uses shirozu shari for white fish and squid, and akazu shari for oily fish such as tuna, hikarimono and kawahagi. The staff explain where each fish is sourced, describe the ingredients to foreign guests in English, and show how to use wasabi. Fish is sent directly from production areas across Japan, along with shime-prepared ingredients.
