Sobayoshi Honten

Sobayoshi Honten is a soba shop near Nihonbashi Station run directly by a katsuobushi wholesaler. Its standard offerings are dashi infused with katsuobushi aroma, served with tentama soba and vegetable tempura soba, plus rice sprinkled with katsuobushi powder. Buy a meal ticket with cash from the machine on the right of the entrance, hand it to the counter inside, and take a seat; your number is called in about 5 to 10 minutes. All seating is chairs, but the shop is small, and during busy times it is awkward to line up or move around.
