Makitori Shinkōbe

Makitori Shinkobe is a yakitori restaurant a 1-3 minute walk from Akasaka-mitsuke Station in Tokyo. It grills Hinai chicken from the Akita highlands and Choshu chicken from Yamaguchi Prefecture over firewood, and its representative items are chicken infused with firewood smoke and torisoboro gohan. Courses begin all at once at a kozagata counter, where the high heat of the firewood produces a crisp exterior and a moist interior. The restaurant moved from Azabu-juban in November 2023 and continues to serve firewood-grilled chicken dishes.
