Nonbatgol Bongcheonjeom in Bongcheon-dong, Seoul is a galbi restaurant that serves only one dish: wang galbitang. Each bowl contains at least three large galbi bones and comes with geotjeori, seokbakji, and buchu muchim, and diners add buchu and dadaegi partway through to change the broth's flavor. It opens at 9 a.m. and closes when ingredients run out, often around 9:30 a.m. or around 11 a.m., selling only 200 bowls a day including takeout. The dining room is very small, so guests may share a table facing strangers and may wait outside for a long time.
