Ramen Shinogu serves rich tonkotsu ramen and sits about a five-minute walk from Ichijoji Station in Kyoto. Its main dish, tetsunou tonkotsu, combines back fat, thick chashu, and medium wavy noodles, and you can choose between thin noodles and wavy noodles. You order first at a ticket vending machine, and water, chopsticks, a ladle, spicy bean sprouts, and spicy pickled chili are self-service. Seating is counter-only, with around 10 to 12 seats. The broth and seasoning are on the salty side, so it feels heavy if you expect a light flavor.
