Ongyeol

On-gyeol is a Korean restaurant in Busan that serves dwaeji gomtang and sous-vide hangjeong naengjeyuk. The clear gomtang is boiled using separate broths for the parboiling and for the soup, and the naengjeyuk is served with minari and a yuja sauce. A hansang charim lets diners order the gomtang and naengjeyuk together, and induction cookers hold the soup temperature. Jazz music plays, and there are about nine seats.
