Hakuba

Hakuba is a counter restaurant inside the Cheval Blanc hotel in Paris that serves Japanese-style omakase. The course includes eel and sushi, with optional sake or wine pairings. All seats are at the counter, so diners watch the chef prepare each plate in front of them. The course runs about three hours, which is demanding for a short itinerary.
