Very Fresh Noodles is a Chinese noodle shop in Chelsea Market in New York that serves Taiwanese beef noodles and knife-cut noodles. The wide hand-pulled noodles are made to order and served in a rich beef broth or as tan tan noodles with a mala aroma. The hand-pulling can be watched in the open kitchen, and food comes out quickly after ordering. Seating is limited, so sitting down to eat is uncomfortable.
