Taikun Sushi is a small counter restaurant in the Lower East Side of New York that serves omakase nigiri sushi. The fish is prepared to bring out its natural sweetness, with soy sauce and sake marinade, yuzu, and olive oil added, along with sake pairing. Chef Perry explains the ingredients and the Japanese origin of each nigiri, and a chef and a server handle the food, drinks, and service. The counter has only 6 to 8 seats, so reservations are required.
