Cavalier is a bar on the fifth floor in Kyoto. The bartender makes cocktails, and instead of a menu, you tell them your preferred spirit or cocktail taste and they build a drink to match. Music with character plays alongside the cocktails, and the bartender asks what suits you. The bartenders handle classic cocktails themselves and are passionate about making them.
