Unagino Shiromura in central Nagoya is an eel restaurant serving unadon and hitsumabushi. Hitsumabushi is eaten in stages: plain, with seasoning, then with ochazuke or raw egg. The eel has no detectable bones, with a lightly crisp outside and a chewy inside. At lunch a line forms, so going without a reservation means waiting.
