Shimazu

Sushi Shimazu serves traditional Edomae sushi and sits a 2-5 minute walk from Shirokane-Takanawa Station. The omakase starts with small dishes and moves on to nigiri, where large, firm shari with a mild acidity carries toppings such as tuna and isaki. Since opening independently in November 2020, the restaurant has operated only eight seats at an L-shaped counter, by full reservation and with a single starting time. Reservations are difficult enough that new bookings are rarely accepted.
