Saito

Sushi Saito is a sushi restaurant in Roppongi, Minato City, Tokyo, serving sushi and side dishes made with red vinegar shari. The tuna, chutoro, purple sea urchin, and shrimp are served, and the shari is warm and soft in texture. It received three Michelin stars multiple times between 2010 and 2016. It operates as a members-only restaurant, so reservations are difficult.
