Hyeonraejang is a Chinese restaurant in the basement near Mapo Station in Seoul that has been open for over 60 years, serving jjajangmyeon and Chinese naengmyeon made with hand-pulled noodles. The signature old-style jjajangmyeon includes large pieces of vegetables such as pumpkin and potato, and the noodles vary slightly in thickness, giving them a chewy texture. Orders arrive in under five minutes, and the restaurant has a large basement hall and a parking lot. Because the hand-pulled noodles are uneven in thickness, some undercooked noodles can be mixed in.
