Guldari Sikdang is a restaurant in Gongdeok-dong, Seoul, that has operated since 1977 and serves kimchi stew and jeyuk bokkeum. The thick kimchi stew is made by boiling aged kimchi in beef bone broth, and the large portion of jeyuk bokkeum comes with egg roll, fish cake stir-fry, and gim. Food is boiled in large batches and served in stainless steel bowls rather than in the pot, and serving is fast. The jeyuk bokkeum has a high proportion of lean meat and is dry.
