Underlab

Underlab is a salad shop in the Gwanghwamun area of Seoul that sells salads, sandwiches, and poke. The salads and sandwiches are not heavily salted, the dressings use in-house variations, and the poke portions are large. Cooking starts when an order is placed, so food takes about 10 minutes to come out and is served warm. The chicken breast salad uses sweet potato and kabocha instead of brown rice.
