Jeju Seomun Susan is an omakase-style raw fish restaurant in Jeju's Maeil Market that serves aged hoe prepared in the Japanese style alongside a range of other dishes. Courses arrive in a continuous sequence from cold to warm dishes, and the portions are large. Aged hoe is followed by a series of other dishes, and diners can bring their own alcohol for a corkage fee. Reservations are required.
