Gonae Hoetjip in Jeju serves wild-caught hoe, including mackerel hoe and whatever fish came in that day. The menu offers filefish hoe, rockfish (ureok) hoe, filefish jorim, and filefish maeuntang (spicy fish stew), served with filefish liver and blanched skin. Live-fish hoe can sell out quickly, so call ahead or arrive early. Other dishes besides hoe are sometimes unavailable, which narrows the ordering options.
