Sushi & is a sushi restaurant in Jeju that serves omakase centered on ingredients produced on Jeju. The sushi features aged hoe, including mackerel sushi and tuna akami. The omakase course proceeds with the chef's explanations of each menu item, and the sushi is served with aged hoe that has little fishy smell. The shari seasoning is on the strong side, which is divisive.
