Ginza Chojuan is a soba restaurant five minutes from Higashi-Ginza Station in Tokyo. Its signature dish is the original duck seiro, served with a tsuyu dipping sauce containing grilled leek and duck meat. The restaurant opened in 1935, and its thin soba is chilled in cold water for a chewy texture. At lunchtime the seats are almost all taken, so customers may be seated at a shared table.
