Midam is a restaurant in Busan that serves jokbal. The menu includes bul jokbal, garlic jokbal, naengchae jokbal, and makguksu noodles. The jokbal is roasted a second time in a wood-fired oven, leaving the outside crisp and the inside moist. The wood-fired jokbal takes a while to prepare, so ordering it in advance and then arriving is the convenient approach.
