Hinoya is an old Japanese restaurant near the approach to Fushimi Inari Shrine in Kyoto, serving udon, inari sushi, and skewers of sparrow and quail. The udon broth is saltier than the usual Kyoto style and has a strong kelp flavor. The sparrow skewers are grilled whole with the head and bones, so the texture of the bones is more prominent than the meat. Staff are indifferent in seating and taking orders, so service should not be expected.
