Gigye Udon is a 30-year-old noodle shop near Sindaebangsamgeori Station in Seoul that serves udon and an old-style jjajang. The udon uses an anchovy broth with ssukgat added, and the noodles are machine-extracted and chewy, served with kkakdugi on the side. The open kitchen lets you watch the noodles being pulled, and water is self-served from a water purifier. The jjajang is a weaker menu item than the udon.
